Nick Lachey and Vanessa Minnillo went out for a romantic meal at Nello’s restaurant in NYC a couple of night’s ago.

But it was at the Hot Wheels event a few days ago that he gushed and gushed about his girlfriend of nearly two years, saying, basically, that she’s everything his ex-wife wasn’t.

“She and I are a lot alike. What I’ve always loved about her is she’s just real chill – we’ll go play darts in the bar and have a pint – kind of girl. She’s low-key and low-maintenance and we just have a good time.”

Nick added, “She and I are both easy-going – We’ll rent a movie, eat pizza. And she’s a great cook. She cooks a lot actually – chicken enchiladas, casseroles, lasagnas. … She’s definitely doing it right!”

Michelle Williams spoke for the first time about her split with the late Heath Ledger in an interview just weeks before his death. In the recently published interview with British magazine Wonderland, Williams says she doesn’t “try and anticipate so much anymore.”

She said: “Obviously so much has changed for me in the last few months that I don’t really have and idea of what my life is going to be.

“I thought I knew certain things and it turned out that I didn’t, so I don’t really try and anticipate so much anymore. I’m not making any bets on the future.”

New mom Christina Aguilera proudly shows off her one-month-old son Max Liron Bratman in this week’s People (US) and Hello (UK).

Aguilera says she is “head-over-heels in love” with her newborn baby.

Max was born on January 12 in L.A. with hubby Jordan Bratman by her side, and she appears to be revelling in her new role.

Aguilera, 27, gushed: “He’s completely changed my life.”

She said recently: “I’m enjoying him every second. I can’t stop staring at him, studying him. You can’t believe you created this. Me and my husband couldn’t be happier.”

Kate Hudson revealed at the Hollywood premiere of her new movie with Matthew MacConaughey, Fools Gold, that she could never date her co-star.

Hudson said that love scenes with McConaughey made her laugh and that the two of them “wouldn’t work.”

“The fact that I couldn’t stop laughing [during the love scene] was a bad sign,” she laughed.

“He was making (grunting) sounds that I never heard of. No, Matthew and I wouldn’t work.”

Hudson also seems to be a bit bitter about dating these days, saying “I have no desire [to date].”

“If I go out, it’s like once a month, and I end up in a tabloid with somebody lying about me. It’s not fun, and it’s not worth it.”

Grey’s Anatomy actress Katherine Heigl and her husband, musician Josh Kelley, were all lovey dovey at the Victoria’s Secret — What is Sexy Party last night. Heigl recently revealed to Oprah that she, for the first time, felt under pressure to lose weight for her December wedding.

She said “I’ve never been so paranoid about my weight in my life. There’s something about a wedding dress. I never felt that way on a red carpet. I wear my Spanx, and I want to look my best, and I do what I’ve got to do, but for some reason that dress just freaked me out.”

The lovely Reese Witherspoon brought along her mini-me, daughter Ava, out to run some errands over the weekend in Brentwood. After picking up the dry cleaning, the two made a quick stop for a drink — Reese getting her usual coffee, while Ava settled for lemonade. Reese recently had to deny rumors of an engagement to Jake Gyllenhaal. Rumors starting going around the two got engaged in Italy, but Reese’s rep says “There’s not one ounce of truth to it.”

Oscar-winning actress Hilary Swank attended the Jill Stuart 2008 Fashion Show during Mercedes-Benz Fashion Week in New York City. With Valentine’s Day approaching, the celebrities are always asked what they’re doing to celebrate with their partners, and Swank’s answer to that was less about how she’s spending it, and more about how it’s not that special of a day. She says, “Every day should be Valentine’s Day. Every day you should show the person how much you love him or her. People should not be taken for granted because you never know what’s going to happen tomorrow.”

Heath Ledger’s ex-fianceé and mother of 2-year-old Matilda Rose, Michelle Williams, has released the following statement through her publicist regarding Heath’s passing:

Joel Madden and Nicole Richie took a quick break, from all that comes with having a newborn baby, as they left their daughter Harlow at home, while going out for a stroll and some coffee in Los Angeles on Sunday afternoon. A little alone time for mom and dad is good and it isn’t the first time the proud parents have left their little girl at home — Joel and Nicole attended Benny Medina’s 50th Birthday Party a few days ago, where Nicole showed off her already flat stomach.

Eva Longoria is currently in London, where she is promoting her new movie Over Her Dead Body. Yesterday afternoon Eva was seen walking down the streets of London, arm in arm with her hairdresser Ken Paves. The two did some shopping at some fancy stores, before going to the red carpet premiere of Eva’s movie later in the evening.

In Over Her Dead Body, Eva plays “a spirit who would do everything to stop the female love-interest role from falling in love with her former fiancé.” And according to Eva, the bad girl role was what made her want to do the film. “I find more fun in bad girls. The good girls are always so boring,” she says.
