Vanessa Minnillo is featured in the new issue of Vegas magazine and in it she reveals her desire to act, and in fact she just signed on to star in her first feature film called Redefining Love. Minnillo, who had a cameo in the Fantastic Four sequel, says “When I was on the set of Fantastic Four, I loved it. I respected everyone’s work ethic. It was like a mini-family, and I want to continue doing it, whether it’s action or comedy or action-comedy. I can pull off physical comedy; I’m athletic enough not to get hurt easily.”

“I got to do MTV for four years, ET for two years, then left to put my heart into other things for a while. I just love new experiences. I was an air-force brat that attended eight different schools in my first nine years of school, so I feel I can adjust to anything,” Minnillo tells the mag.

Nick Lachey and Vanessa Minnillo went out for a romantic meal at Nello’s restaurant in NYC a couple of night’s ago.

But it was at the Hot Wheels event a few days ago that he gushed and gushed about his girlfriend of nearly two years, saying, basically, that she’s everything his ex-wife wasn’t.

“She and I are a lot alike. What I’ve always loved about her is she’s just real chill – we’ll go play darts in the bar and have a pint – kind of girl. She’s low-key and low-maintenance and we just have a good time.”

Nick added, “She and I are both easy-going – We’ll rent a movie, eat pizza. And she’s a great cook. She cooks a lot actually – chicken enchiladas, casseroles, lasagnas. … She’s definitely doing it right!”

Nick Lachey’s girlfriend, and former MTV VJ, Vanessa Minnillo was spotted out and about running errands in Brentwood yesterday afternoon. Minnillo was looking very dressed up for someone going to the post office to send some letters, but she looks cute. Her and Nick have lasted quite a while now, good for them!

FOXNews is reporting that Nick Lachey and Vanessa Minnillo are tying the knot this weekend in a “secret” ceremony at one of the Carlyle Hotels in the Bahamas.

Minnillo’s entourage arrived at the dazzling digs Friday afternoon, according to a source. Reps for the couple could not be reached.

Could it be true? I guess we’ll find out shortly.

Nick Lachey and Vanessa Minnillo had been laying low for quite some time, but decided to get out and have some fun as they spent a few days soaking up the sun, partying and attending events in San Juan, Puerto Rico. The cute couple share the same birthday, November 9th, and speaking to OK! magazine about sharing his birthday, Nick says “I like to think I’m a gentleman about it and try to think of her. It’s her day as much as mine.” As for what Nick will surprise his girlfriend of a year and a half with, he will only say, “I already have it and actually asked if she wanted it tonight, but she said, ‘No, I want to wait.’ ”

Nick turns 34, while Vanessa turns 27.

Nick Lachey and Vanessa Minnillo have kept an extremely low profile since the all-too-exposing photos hit the internet and since they gave an exclusive interview to OK! magazine about it. They did make an appearance at the grand opening of the new Atelier building and Vanessa went bowling with a friend, but otherwise these two have been staying out of the lime light — until now. The happy couple were spotted on Monday leaving Butter nightclub in New York, where they rushed past the waiting photographers.

Meanwhile, a “friend” of the couple has revealed that the lovebirds are shopping for wedding rings and says that Vanessa “knows exactly what she wants.” The friend says, “Vanessa has always wanted a cushion-cut diamond. But at the Kentucky Derby in May, Vanessa changed her mind after she saw and emerald-cut engagement ring on another Derby-goers finger.”

Nick Lachey and Vanessa Minnillo may have just purchased a beautiful $1 million apartment in the luxurious Atelier in Manhattan, but one thing that’s not so good is that Lindsay Lohan also bought an apartment in the new building, and with all the paparazzi always camped out to see what LL is up to, Nick and Vanessa might not love their new neighbor. Nick and Vanessa’s new condo is said to have two bedrooms and two full bathrooms. It’s around 1000 square feet, and has a full-size basketball court and swimming pool on the premises. For Lachey, the basketball court was a huge selling point, “where in Manhattan can you find this?” he asked reporters at the grand opening, referring to the full-court facilities.

Nick Lachey and Vanessa Minnillo attended the Grand Opening of the Atelier building last night in New York City. Atelier is a 45-story luxurious residential building, where Nick and Ness are reportedly moving in together.

According to a report in this week’s Star magazine, Jessica Simpson branded the Nick Lachey and Vanessa Minnillo hot tub pictures “tacky” — and quite rightfully so! The magazine cites a source that says, “Jess was lunching with some friends and someone brought up the hot tub pictures. Jessica scrunched up her nose, made a face and said, ‘That is sooo tacky. Have some modesty!” The source added, “Jessica thinks that carrying on like that was classless. She suspects Vanessa knew she was being photographed and played to the cameras. She wouldn’t put it past her to have staged the scene.”

Meanwhile, OK! Magazine have reportedly paid $400,000 for the exclusive rights to the photos of Nick and Vanessa getting down and dirty in a hot tub in Mexico. Reports say that the mag only bought the pictures to keep them off the market and to keep Nick and Vanessa happy. After all, the couple did give OK! their first ever interview and photo shoot.

A source said, “There’s much worse stuff than what got out there on the Internet. If Nick’s fans saw it all, it would definitely change his career, because he kind of has a squeaky-clean image.”
